IBEX Kitchen Knife

The Windmühlenmesser IBEX is a major new development in ratchet lock pocket knives. Its blade contour is based on a historic shape made for ancient South of Arabia, the Hadhramaut. The traditional and greatly improved ratchet lock holds the blade securely in place both open and closed. Designed and manufactured in the heart of Solingen-Ohligs by Windmühlenmesser.

The collection currently includes two sizes with different handle scales and accessories for sharpening and storage. IBEX pocket knives are suitable for all outdoor activities, as well as hunting and meat knives for tendoning, skinning, gutting and filleting.

Two types of steel are available for the blades: stainless 1.4116 CrMoV steel and non-stainless 1.2067 carbon steel. Whether you choose the stainless version or the classic carbon version, every IBEX will impress you with its performance and reliability.

The handles are made from high quality woods: plum, olive, black walnut, thermo beech and smoked oak. They give the knives a unique look and feel.
